I once injected pineapple juice into one half of a gammon joint and cooked it. The half with the pineapple in it was so tender it fell to pieces. There's a story of an incident in Malaya (I don't know if it was WWII or the Emergency. A British Patrol had got lost and had run out of rations. They came across a plantation of Pine apples and stuffed themselves silly. The enzyme attacked their stomach linngs and they were very ill. May only be apocryphal but it illustrates the point. Mm!
