Food Monday ~ Apple & Raisin Spice Bars

Apple & Raisin Spice Bars
Preheat the oven to 190°C

3 medium Cooking Apples
4ozs softened Butter
6ozs soft brown Sugar
1 Egg, beaten
½ teaspoon vanilla Essence
8ozs Plain Flour
2 teaspoons ground Cinnamon
½ teaspoon Nutmeg
½ teaspoon Salt
½ teaspoon Baking Powder
1 teaspoon Bicarbonate of Soda
4ozs Raisins

Peel, core and chop apples.  Cook with very little water.  Blend to make ½ pint thick puree.  Beat the butter and sugar together.  Add the egg and vanilla, and then stir in the apple.  Fold in the dry ingredients with the raisins.  Pour into a greased 7in x 12in tin.  Bake for 30-40 minutes until well risen and spongy.  Remove from tin and cool before slicing into bars.
Alternatively spoon into Muffin cases and bake for 20-25 minutes.

    Have you tried this with oatmeal / porridge oats and a bit more liquid (to get the oats to stick together) to make flapjacks or breakfast style bars?
