Food Monday ~ Caramel Fingers

Caramel Fingers

Preheat oven to 170°C

For base:
200g Butter
100g Icing Sugar
200g Flour
100g Cornflour
Pinch Salt

Cream fat & sugar thoroughly until soft and light.  Gradually work in the flour and cornflour and knead until smooth.  Press into a floured 13in X 9in tin and bake for 15-20 minutes.

Filling:
200g Butter or Margarine
200g Caster Sugar
1 tablespoon Golden Syrup
Large tin Condensed Milk

Place all the ingredients in a pan and bring to the boil. Continue boiling for 5 minutes stirring continuously.  Cool for 1 minute.  Pour over shortbread base and leave to set.

Topping:
Chocolate to cover
When set cut into squares.

Jim’s kitchen

Not another Toyboy to talk about….

I mean the place we met for lunch on Saturday.  There were nine of us in number and the craic and chat were mighty.  The venue was new to both Elly and I and as we approached we were looking for the name Jim in the title.  Not finding it we decided to venture indoors to explore.  We did have a text to say they were gathered at a table in the back.

As we were about to make our entrance another lady was eyeing us up.  I asked if she was here for the Blogger’s meet-up and she said “I thought I recognised you”!  We quickly discovered she was Susan C and this was her first meet-up so we quickly headed indoors to make introductions.

Already gathered were Lily, Steph, Cathy. Marian, Lorna, & Marie, and Lily had thoughtfully arranged when reserving the table, to have wine, soft drinks and nibbles for us while introductions were made.  It was a great beginning to a wonderful day.

Beginning centre front with Elly’s cardigan (she was behind the camera) and moving anti-clockwise we have: Lorna, Marie, Marian, Steph, SusanC, Cathy, Lily & GM.

We moved to the counter in batches to select our food and there was something to suit all food needs.  The desserts were to die for and I looked, drooled and past by most of them until I found something without cream.

All the while the chat continued…..

We covered food & drink, cooking, baking & crafting, books & book clubs, keeping chickens & the problems with foxes, the weather and eating outdoors.  Then there were holidays and honeymoons, arranging weddings, and travel. We touched on health before moving on to our common link of Blogs, blogging, blogging platforms and all things techie.  The pros and cons of Twitter and Facebook were aired and debated. We all came away having learned something new

Now I wonder where we will have the next meet-up!

Letters

Our Loose Blogging consortium includes Anu, Ashok, Conrad, Gaelikaa, Ginger, Judy, Magpie 11, Maria, Ramana and yours truly.  Each of us when available, will contribute a piece for the topic for the week. Letters

After noon already and I am about to begin writing my LBC Post. 

Being a gadabout on Buses since Monday is of no help.

Carefully chosen words are needed. 

Distractions must be set aside for now. 

Everywhere I look, I see reminders of things I want to see or do. 

Fortunately I will be about for a few more days of fun and adventure.

Glorious sunshine bathes the city of my birth.

Heartfelt hugs are plentiful this week.

Jason was a wonderful lunch companion yesterday.

Kieran’s welcome was warm and the ice cream cold at Murphy’s Ice Cream in Wiclow street.

Leaving early tomorrow morning to meet the girls for lunch! :D

Memories flooded back as I revisited old haunts.

Now it is almost time to take my camera for a walk.

Outside the breeze is warm and welcoming.

Perfect meals to enjoy each day from the Not Junk Food Kitchen! :D

Quiet few minutes to sit and think.

Returning home will happen all too soon! :sad:

Sleep has been discovered and with it I am told I snore! :sad:

Learning every day…



I have always said, you should learn something new every day. Unfortunately, many of us are at that age where what we learn today, we forget tomorrow. But, give it a shot anyway.

If I remember, I’ll be back at LBC time.

Thursday Special ~ The Supermarket

A new Publix Supermarket opened in Pinellas Park, Florida. It has an automatic water mister to keep the produce fresh. Just before it goes on, you hear the distant sound of thunder and the smell of fresh rain.

When you pass the milk cases, you hear cows mooing and you experience the scent of fresh cut hay.

In the meat department there is the aroma of charcoal grilled steaks and brauts.

In the liquor department, the fresh, clean, crisp smell of tapped Miller Lite.

When you approach the egg case, you hear hens cluck and cackle and the air is filled with the pleasing aroma of bacon and eggs frying.

The bread department features the tantalizing smell of fresh baked bread & cookies.

I don’t buy toilet paper there anymore.
