I am sure the combination of Pineapple and Gammon comes from the need often to tenderise the Gammon. Pineapple comtains a proteolytic enzyme IIRC. I once injected pineapple juice into one half of a gammon joint and cooked it. The half with the pineapple in it was so tender it fell to pieces.
There's a story of an incident in Malaya (I don't know if it was WWII or the Emergency. A British Patrol had got lost and had run out of rations. They came across a plantation of Pine apples and stuffed themselves silly. The enzyme attacked their stomach linngs and they were very ill. May only be apocryphal but it illustrates the point.</description>

Baino - That reminds me of something that happened shortly after I came to this town 32 years ago.  While walking up the hill I was talking to a neighbour and we stopped half way to catch our breath.  She asked what my plans were for the remainder of the day. 

 "Well first off, I must cook dinner!" I said. 

"What will you cook?" she asked.

"Grilled gammon with pineapple, grilled tomatoes, sugar snap peas and Jack will make chips.  Chips are his department" was my reply.

"How do you do that?" she asked once more, so I explained.

A week later I met my neighbour again and she told me the meal was lovely but Derek didn't like it.  He apparently looked at his plate and said:

"Whats this?  If you are giving me my dinner, then give me my dinner.  If you are giving me my dessert, then give me my dessert, but jumping Jerusalem don't give me both together on the one plate!"</description>
