Simply Soups
With the return of the Arctic temperatures I have more soup ideas for you. Today they are basic simple and quick.
Parsnip: Sauté chopped parsnips and onion in butter, then add chicken stock and simmer until vegetables are soft. Blend until smooth, with milk and seasoning.
Carrot: Substitute carrots for the parsnips in the above recipe.
Pea & Ham: Sauté chopped onion and ham. Add frozen peas and chicken stock and simmer. Blend until smooth and season to taste.
French Onion: Sauté sliced onions. Add beef stock, left over white wine, tomato puree and thyme. Simmer until the onions are tender. Serve with croutons and grated cheese

I think I’ll make Parsnip soup today and roast the parsnips first. I like the sweetness of them roasted and I don’t add milk for me!

Glad to help warm you up. Do you have snow today in Cork? I hear Dublin is white. Thankfully we have none… yet! Brrrr it is cold.

Add some coconut and a dash of curry to the parsnip soup and if vegetarian some veggie stock and a couple of tbls of peanut butter. Yum.

Booootiful Sooooop! I use a ham hock in my pea and ham and simmer it for hours until the meat falls off the bone. A bit fiddly getting all the fat and bone out but simply sumptuous.

Thanks to your prompting…
we had yummy leek and potato soup tonight made with a chicken stock (out of freezer). I added some garlic and a little grated nutmeg for extra flavour..nom nom! Perfect for the night that’s in it.
Don’t know how Baino can think about soup with all the hot weather she’s having!

Great soups and I’ll be trying some soon.. The temps here are single digits a prevailing and the groundhog saw his shadow..which means we have another 6 weeks of miserable winter..

Thanks for the parsnip soup idea - I don’t know why I haven’t been making root soup all winter long. Except for today, the weather’s been in the Arctic vein here in Toronto as well.
When I think of it, I take all my root veggies (parsnips, carrots, sweet potatoes, etc) and roast them with garlic and rosemary and then blend them with stock, milk, salt and pepper. Also good for days like these.

We’ve been liquidising vegetables for soup since christmas - parsnip and sweet potato are favourites in the house and I still can’t get my kids to eat them unless they are in a soup !
I always chuck a few chilli seeds in the mix before liquidising too, makes a really nice warming soup on a cold winters night - and it gets stronger the longer you leave it

@Micha - The best place for a hot water bottle is between your thighs. That way the heat travels up and down the body quickly.
