Quick & Easy Carrot & Leek Soup

6 Carrots

1½ pints Chicken stock

4 Large Leeks

1 tablespoon chopped Parsley

1 tablespoon cream

Salt & Pepper

Cook carrots and leeks in stock. Liquidise and return to pan. Add parsley and seasoning. Serve with a swirl of cream in each bowl.

    This recipe really does look easy peasy :D

    The next time I make a homemade chicken stock, I shall make sure to have carrots and leeks at the ready for the soup.

    Maybe this soup will be enough to bring Paddy out of hiding! :mrgreen:

    Actually GM, this recipe I have but it is with parsnips rather than leeks and it is wonderful!!
    I make a leek soup but instead of the carrots I use potatoes.

    @Steph - It is easy peasy and economical, ideal for a flask in a packed lunch on these bitter cold days.

    @WWW - Any mix of vegetables works here. I do have the potato and leek variation.
